Serves 10 people

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (yields 850ml, enough for 10)

400ml good quality vodka

150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish

Instructions

Making the Citrus Syrup: Put all the items into a pot, bring to a simmer, stirring so the sugar melts. Next, turn off the burner and leave to reach room temperature fully. Pour into a clean bottle, close it and store in the fridge, it can be stored for about one month.

Preparing the Premix: Pour all the liquids into a sizeable container, let it rest for an hour, then pass it through preferably using cheesecloth, so it's fully clarified.

For serving: Add 85ml of your batch mix into your cocktail shaker packed with ice, and stir carefully for about 60 seconds to cool it down. Strain into an chilled martini glass or a similar vessel, garnish with the cranberries and finish by giving it a quick spritz of the essential oil over the top.
